Cinwaan (淺cin2 灣waan1) - an ancient name of Tsuen Wan city in Hong Kong, where my soy sauce journey begins. Its all started from a questions of how would the soy sauce taste like, back in hundreds years ago, before industrialised and mass production where things takes times and craft to be created. 

Traditional hand crafted brewing, no additives, in quest of original soy sauce flavors.

The humble soy sauce has only four very simple ingredients, Soy Bean, Wheat, Salt and Water and the most importantly ingredients of all is Time that we spend to take care and allows soy sauce to re-act to one ingredients to another
